PREP TIME: 10 minutes

SERVINGS: 4
Ingredients
Grilled Salmon
1 lb. wild-caught salmon fillet or 4 (4-ounce) fillets
¼ tsp. Kosher salt
¼ tsp. black pepper
olive oil
Strawberry Salsa
1 lb. fresh strawberries, diced
1 avocado, peeled, pitted and diced
1 jalapeno, seeded and finely diced
½ cup cilantro chopped
½ cup red onion, diced
1 lime, juiced 3 tbsp. juice
⅛ tsp. salt
Directions
Toss all the ingredients for the salsa in a large bowl and mix together. Refrigerate until salmon is ready.
Brush the grill with oil to prevent the fish from sticking to the grill. Then preheat the grill for about 10-minutes. You want to grill salmon at 450-500F.
Rub the salmon with olive oil so that the fish is completely coated. This helps create that perfectly golden crispy skin and a moist interior. Then season with pepper and salt.
Grill the salmon skin-side down for 6 to 8 minutes allowing the skin to crisp and protecting the fish from falling apart or sticking to the grill. Flip the salmon and cook on the other side 1-2 minutes until the fish is fully cooked.
Cover the salmon with the strawberry salsa and enjoy!
